Pasta with Avocado Pesto

Ingredients

  • 12 oz 
    Spaghetti, dry
  • 2 med 
    Avocados
  • 3 clove 
    Garlic
  • 3 tbls 
    Lemon Juice
  • 2 1/2 oz 
    Cilandro
  • 1/3 cup 
    Parmesan Cheese

Directions

1. Cook pasta according to package directions until al dente.

2. Meanwhile, prepare pesto by combining avocados, garlic, lemon juice, and cilantro in a food processor. Process until smooth, about 1 minute.

3. Drain pasta and transfer to a large serving bowl.

4. Pour pesto over pasta; toss well and sprinkle with Parmesan cheese before serving.
